The name "Arburent" for the new "Osteria di Confine" by Federico Costa is a choice that encompasses the philosophy of the restaurant: an Osteria that celebrates the beauty of borders, understood not as separation, but as a union of traditions and flavors, and the multiple family roots of the Chef, who has grandparents from Val Borbera, Tortona, Lombardy and Veneto. The interiors of the venue are the result of a careful, radical renovation of the pre-existing hairdressing salon. The result is warm, welcoming and full of character, with bold but restful colours. Arburent is a pleasant modern tavern with a new generation concept. The cuisine of its Chef and owner Federico Costa is based on selected ingredients, seasonality and attention to detail. The name of the restaurant comes from the acronym of the names of patron Massimo's sons, Umberto and Germano, but also plays on the word Umano, to represent the spirit and essence of the concept.


Volcanic patron Massimo Dossena dreamed of creating exactly such a venue, with furnishings that were yes informal but also the result of a flaky architectural design and with a firm and refined local cuisine, with a grill to prepare fine cuts of the choicest meats.


Umano was designed and strongly desired with a format that we fully appreciate and share.

It is the realization of patron Massimo Dossena's dream: a slow, informal but extremely well-kept restaurant, where you eat and drink very well, relax and enrich yourself in food and wine culture...

Everything is very carefully chosen and curated, the result of a simple philosophy that favors humanity over big numbers.

Very smart, clear ideas and impeccable technique, Chef Matteo Romito, who was also able to amaze us with a risotto that was cooked to perfection.
