Salmerino marinato, piselli e burro al dashi. Una deliziosa tartare marinata, condita con zeste di lime, Alga Nori, gelato ai piselli e, a fianco, una salsa in infusione di Katsuobushi e Alga Kombu con erba cipollina e uova di trota. Completa il piatto la finta lisca fatta con pasta sigaretta e carbone vegetale. Risotto alle ortiche, mozzarella di bufala e gel al carpione. Un risotto di cottura “state of the art”, con crema di ortiche raccolte nelle vigne di proprietà. Vino Roero docg 2020, imbottigliato dall’Az. Agr. Malvirà dei F.lli Damonte, @malvirawinery Ottenuto da uve, nebbiolo di color rosso rubino con riflessi aranciati, ha profumo di viola, lampone, fragole e ribes nero. Il sapore è persistente, delicatamente tannico, con note di frutta e vaniglia. The Villa Tiboldi restaurant is part of the homonymous Agriturismo Relais, a splendid charming residence in the Roero area of Canale, of which lemilleUnanotte publishes a rich Reportage . Anyone who associates the idea of simple, free-range structures with the term "farmhouse" will have the opportunity to change their minds by staying in the magnificent suites of this Villa and tasting a refined cuisine with personality in its gastronomic restaurant. In the two dining rooms, the floors are mixed with barrique slats and stone, the ceilings with barrel vaults and exposed bricks, the original appliques on the walls and the designer chandeliers. The menu offers a well thought-out and very tasty selection of dishes. All the preparations are made with a few ingredients with clear and well-defined flavors: a cuisine that is traditional but is also absolutely modern in its realization.
