Chalet Euthalia has a very special location, a luxury chalet nestled in a peaceful corner just over 1,000 meters above sea level, a true tribute to this land so beloved by Chef Gian Michele Galliano. The resort reopens with a new name after years of closure that did not tarnish the critical and public reputation it had built. The real surprise is experienced once you cross the threshold of the entrance, greeted by an environment furnished in late 19th century style with clear French influences (the fashion brought by Napoleon III) and references to the Kingdom of Savoy, which coexist harmoniously with elements of Italian design of greater renown and relevance. Casa Fuego - Menton (F)

Casa Fuego, an Argentinian restaurant au feu de bois created by Chef Mauro Colagreco, is located in Menton 2 steps from the world-famous Mirazur. The interiors are very airy and bright, with the must-have feature of a stunning terrace overlooking the Mentonese port of Garavan. Resident Chef, Matteo Cetti, 28, originally from Como, has a very long experience in Uruguay (a land frequented by Argentines) where he learned the art of fire, embers and parilla management. Technical and motivated, he churns out perfect cooking for a first-rate experience, a true corner of Argentina on the French Riviera... The stunning panoramic location and beautiful surroundings contribute to the overall satisfaction of a gourmet journey of discovery of traditional Argentine dishes (and homemade Italian pastas). Magiargé - Bordighera (IM)

Magiargé, Vini e Cucina, a longtime Convivium presence, is one of the addresses in western Liguria to which we feel most attached. Today the historic Patron Mauro Benso has passed on, handing the place over to Piero Bregliano, a chef we have followed for years every step of the way. The restaurant's new interior has been tastefully revised by Katia Lo Sasso, Chef's partner. Magiargé is one of the most historic establishments in western Liguria, with an original and successful formula of Modern Osteria with a large Cantina. Excellent Piero Bregliano for taking it over from an "institution" like Mauro Benso without distorting it, adding only a few personal touches to the menu. The cuisine, dedicated exclusively to specialties of the Ligurian hinterland and the enhancement of traditional recipes, and the professionalism of all the staff, deserve applause. Giappun - Vallecrosia (IM)

Giappun Restaurant, opened in 1918 by "Giappun," chef Roberto Lamberti's grandfather, has been run for more than a century by the same family. It is located in Vallecrosia, a suburb of Ventimiglia, in a very central location, a stone's throw from Via Aurelia. The interiors are pleasant and refined, with large tile floors with mosaic borders, a back wall that stands out in contrast to the light-colored rooms, packet curtains, and a few elegant tables that are well spaced and well set. Giappun since 1918 is a treasured address to enjoy excellent traditional Ligurian cuisine, with the "must" of uncompromisingly fresh and quality fish offerings. The chef boasts a lifetime at the stove, which translates into dishes with clean and precise flavors, with a few ingredients always perfectly paired. Ristorante Albergo Valli di Lanzo is the home of Chef Francesco Eblovi, who moved to his home valleys after closing the unforgettable "Nuovo Carretto" with a precise, thoughtful and enthusiastic life choice. The Coeur de Bois Restaurant is based in Cogne, inside the Hotel Miramonti, about which lemilleUnanotte publishes a rich Reportage. Its dining rooms are furnished with 18th-century fir wood paneling, antique furniture and paintings. The atmosphere is overall warm, elegant, and muffled. L'Etoile is the largest room, named for the walnut stars carved into the ceiling. Territorial cuisine with a few creative touches is offered at Coeur de Bois, carefully executed in a setting of refined elegance. Lou Ressignon - Cogne (AO)

Lou Ressignon is a true institution of typical regional Aosta Valley cuisine in Cogne. Founded in 1966 by ski instructor Arturo Allera, it is now run by his children Davide and Elisabetta. The interior is mountain style, warm and cozy, with lots of wood and a fireplace. The cuisine is absolutely traditional and makes use of the best local raw materials, all of exceptional freshness, offering a fine array of specialties that deserve to be tasted one by one. From Davide Allera's kitchen come dishes that are impeccable and treated with love, not at all undermined by the restaurant's recurring sold-out numbers: a cuisine that knows how to give emotions, a witness and ambassador of the gastronomic culture of Valle d'Aosta and its aromas and flavors. Le Petit Bellevue - Cogne (AO)

Le Petit Bellevue is the gourmet restaurant of the Bellevue Hotel & SPA, the highly refined Relais & Châteaux in Cogne of which we publish a rich and detailed Reportage in lemilleUnanotte. The two small rooms into which Le Petit is divided have only six tables, each representing diners from various eras since the 1600s. If the Bellevue Hotel & SPA is a wonderful reality of haute hôtellerie with services that satisfy every sense, Le Petit Bellevue could only be its perfect appendix of taste. Marco Viganò and his Brigade give life to a contemporary cuisine of great quality, rightly creative but well attentive to the excellence of the raw material, starting with the products of their own garden: a cuisine that is expressed in colorful dishes, to smell and touch, with a particular propensity to enhance local and regional products.
