Timo Bistrot is the restaurant of Casa del Monte, a magnificent new resort created from an ancient fortress on the slopes of the hill overlooking Albenga. The architects of the important four-year recovery project, which returns to the Riviera a piece of history that seemed lost, are the entrepreneur Nicola Trimboli and the architect Luigi Muratorio. "The Thyme Garden" is a vast terrace reserved for aperitifs at sunset.
