Lou Ressignon is a true institution of typical regional Aosta Valley cuisine in Cogne. Founded in 1966 by ski instructor Arturo Allera, it is now run by his children Davide and Elisabetta. The interior is mountain style, warm and cozy, with lots of wood and a fireplace. The cuisine is absolutely traditional and makes use of the best local raw materials, all of exceptional freshness, offering a fine array of specialties that deserve to be tasted one by one. From Davide Allera's kitchen come dishes that are impeccable and treated with love, not at all undermined by the restaurant's recurring sold-out numbers: a cuisine that knows how to give emotions, a witness and ambassador of the gastronomic culture of Valle d'Aosta and its aromas and flavors. The restaurant A Viassa, run by Stefano and Aimone Cassini, the same surname but not related, is located in Dolceacqua, a magnificent medieval village in western Liguria famous for its Roman humpback bridge and the Doria Castle. The modern entrance overlooks one of the most central streets, a few meters from the main square of the village. The modern, bright and pleasant interiors are characterized by the bar counter right next to the entrance door. From here a raised platform with rounded shapes divides the floor into two portions. The two Cassini, Stefano and Aimone, boast a past of significant experience with Romolo Giordano, a prominent figure in the catering industry of western Liguria. At La Viassa they have brought an attentive cuisine, based on the rediscovery of the recipes of memory and of the territory, together with the research of niche labels for the cellar and an informal but warm welcome. Faithful to the philosophy of not looking at the restaurants' reputation but at the quality of their cuisine, here we are in a "old way" country restaurant with the vast dining room set up for large numbers on holidays and the menu recited by word of mouth: a no-frills place, but well-known to gourmets. The Fungo Reale, which is also a Hotel, is a well-known and appreciated reality in Valle Stura and in the Cuneo area, immersed in a beautiful landscape characterized by chestnut woods where there are abundant mushrooms.
