Un grande piatto dell’antica tradizione genovese, che richiede una cottura separata per ogni singolo ingrediente, preparato in maniera impeccabile, con il giusto tocco di acidità conferito da un po’ mollica di pane abbrustolito bagnata in aceto posata alla base.
