Ristorante Cibus - Ceglie Messapica (BR)

Image
The Cibus restaurant, located in an evocative former 15th century Dominican convent in the heart of the historic center of Ceglie Messapica, is a true temple of regional gastronomy, a member of the "Premiate Trattorie Italiane" circuit, an association that brings together the custodians of tradition and genuine Italian hospitality. Let's leave it to the Patron Lillino Silibello himself to clarify the meaning of the epigraph "Dissident Cuisine": "The dissidence of a cuisine begins from the bottom: from the earth, from the hands, from the effort. The disagreement with industrial logic is manifested in the use of ancient varieties of raw materials and in the search for purely traditional transformation processes, the result of meetings between farmers and artisans. We remain in this position to allow you to taste forgotten flavours. This is for us, the cuisine dissident". At the Cibus restaurant we lived a rich and stimulating gastronomi...

Trattoria Visconti - Ambivere (BG)

Image
The Trattoria Visconti is an intimate and welcoming restaurant located in the historical center of Ambivere, a small town a few kilometers from Bergamo. The Regione Lombardia (Lombardy Region) has recognized the Trattoria Visconti as a "Historical Establishment"; the Visconti family has been directly managing it for three generations, taking care to model tradition with the evolution of taste. The manor house is located next to the ancient medieval tower, in front of which there is a well-kept vegetable garden flanked by a large gravel area where parking is convenient. The Trattoria Visconti is a founder and member of the Premiate Trattorie Italiane. Once inside the gate, the front door opens right next to the hedges that border the garden. From the arched doorway, through the reception hall, you enter the restaurant. They are spacious and well-kept, full of warmth and atmosphere, with ochre and cream tiled floors, light-colored walls and many niches and cup...

Eremo della Gasprina - La Morra (CN)

Image
Eremo della Gasprina is a small restaurant with rooms located in a panoramic position in the Langa hills in a hamlet of La Morra. It is passionately run by Simone Burlotto and his partner Giulia Calzia, who have transformed it into a gem of excellent cuisine and wine cellar. A highlight of the restaurant is the veranda with beautiful views of the hills, which is taken advantage of during the warm season. Eremo della Gasprina's current formula is a stimulating and well-rounded "surprise" tasting itinerary that intrigues and satisfies. One drinks very well, thanks to the pairings thought up by Giulia, who is not only an excellent Sommelier but also a perfect "hostess". Simone and Giulia are a very well-matched couple who have been able to command attention in a difficult and competitive "square" like the Langa: he a chef with clear ideas and an inspired hand, she a punctilious and passionate sommelier. Osteria Nuova - Torino

Image
The Osteria Nuova restaurant is centrally located in Turin, just a stone's throw from Porta Nuova train station. In front of the entrance is a counter with a reception nook, the kitchen, and the staircase down to the main dining room, which can be seen from the glass plate floors. The interior is divided into two rooms. The Infernot in the basement, which is reached by a handmade wrought-iron staircase, is very typical and striking. The walls are left with exposed brick, only some of the plastered portions are painted purple-red. Osteria Nuova is a true Turin "gem" that deserves high regard. We found there, worthy of the highest praise, an almost maniacal search for perfection, from the choice of ingredients and raw materials to the kitchen realization of individual dishes. All the dishes chosen to make up the menu are the result of a thorough investigation of local recipes and careful and intelligent elaboration. Chef Stefano Biavaschi is a self-taught chef who is ...

Il Trittico Osteria - Alba (CN)

Image
Il Trittico Osteria is based in Alba, the heart of the Langhe and home of the White Truffle Fair, in the historic center. It draws its name from its three very young founding friends, Mirko and Chiara, partners in life, and Andrea. You will be welcomed by Chiara Abbate, a hostess of exquisite manners. The interior, which has been entirely renovated, unfolds in large, bright, essential spaces with very well matched hues. The atmosphere is young, modern and "casual" (but cared for in every detail), the kitchen is the natural evolution, with migration from the home stove to a venue open to the public, of a small workshop of passionate connoisseurs for its own equally passionate audience of connoisseurs. Since all preparations are grafted onto a base of Langhe tradition, do not expect daring or surprising experimentation, but rather a search for clean, sharp and precise flavors, never wanting to overdo, in perfect balance. There is no shortage of playing with textures and c...
