Siamo a Carrù non potevamo farci mancare sua maestà il Bollito misto con le sue salsine. Il Bollito misto alla piemontese, piatto simbolo del locale, cucinato tutto l’anno e servito in sala al carrello accompagnato dalle sette salse: bagnetto verde, cognà, salsa piccante, salsa all’aglio, salsa di rafano, salsa del Borgo, salsa rubra casalinga. La carne utilizzata è esclusivamente di razza piemontese di allevamenti limitrofi al paese; per buona parte dell’anno si utilizza il blasonato Bue di Carrù. In accompagnamento, purea di patate e carote lessate. Trippini Restaurant, a JRE member, is based in Umbria's Civitella del Lago, in a spectacular panoramic location on Lake Corbara, a location that makes the tasting experience even more unique.


Trippini has been a family restaurant for three generations.

Crossing the threshold of the entrance, you will find yourself in an elegant and refined room, with an entire wall of windows to enjoy the magnificent view. On one wall, framed photographs of some highlights of the Trippini Family history, with a place of honor for Dad.


Ristorante Trippini represents one of the most authentic expressions of Umbrian cuisine, with a perfect balance between contemporary interpretations and respect for tradition.

It is a real pleasure to be able to taste dishes that have been handed down from generation to generation, masterfully prepared so that even today's more "spoiled" palates can enjoy them to the full.

In this sense, Paolo Trippini's cuisine is a true hymn to the great tradition, through refined elaborations supported by a solid and mature technique.

The location is postcard-perfect: a breathtaking panorama that can be enjoyed from every corner of the room, making the experience even more unique!
