Autentico is located in Cherasco, Piedmont's snail capital, in the historic cellars of Palazzo Ormea, right in the center of town.
The unique room, renovated with great taste, has rectangular development and an open kitchen.
Tables are set with C.F.B. tablecloths, shiny Hepp Exlusiv 18/10 steel cutlery, beautiful Brazilian Tramontina meat knives with wooden handles, Churchill plates and Caraiba stemware.
A Poldina Zafferano led lamp at each table completes the curated mise en place.
Having long known maìtre George Marica, a guarantee, and Chef Stefano Rudino, whom we have already met in previous reports, we visited Autentico Cherasco with high expectations, which were punctually fulfilled.
We had the idea of finding good local cuisine revisited in a modern key, and so it was, because here the authentic tradition, the “grandmother's” one to be clear, is reproposed (and even surpassed) with ideas, balance, taste and technique.
Stefano Rudino's cooking is well calibrated, personal and clean: no flights of fancy but lots of intuition and a fine hand in combining flavors and textures.
