Fuga di Sapori Bistró - Alessandria

Fuga di Sapori Bistró is an absolutely sui generis eatery housed within the walls of the Alexandria Prison. The entrance is independent, and if this-for the clientele-means not having to pass the Prison's inspections, for the staff working there it instead has the meaning of a great concession of trust, since these are inmates who are serving their sentences, who are allowed to have vocational training and paid work, which translates into a concrete hope of future reintegration into society.
The rectangular-developed main room is personally decorated with themed blow-ups. The Cooperative, whose intent is to provide jobs for inmates inside and outside the walls, giving them a concrete hope of future reintegration, owns an artisanal pastry workshop. The products, which are truly excellent, are for sale on the Bistró's shelves along with craft beers made with hops from its own hop garden and acacia, lavender and wildflower honeys from its 20 proprietary hives.
Fuga di Sapori Bistrò represents first and foremost a concept of immense social value, which is accompanied by a true gastronomic experience, which is obviously not based on fine dining but on solid local cuisine of excellent execution. Original and witty are the names affixed to all the food, ironically inspired by the penal and prison language.
Luca Gatti is an educated and prepared chef who has been able to immerse himself with enthusiasm and passion in an absolutely innovative and, in its own way, risky mission, not so much because of the delicacy of the location, but because of the difficulties in having to form a professional brigade starting from completely heterogeneous situations. His goal, in our view, has been fully achieved, and the rewarding result is the success of the restaurant's public. The Kitchen works very well, without ever going into a slump even when the place is full, and the Room works with an absolutely commendable politeness and kindness. We felt attended to and pampered, gratified by the smiles in accompaniment to each course.
