La Bursch, the family home of Milanese entrepreneur Barbara Varese, is a country house with a gourmet restaurant located a short distance from Biella.
The original 17th-century historic residence has been transformed into a house museum thanks to the meticulous restoration of a large complex of interconnected stone buildings surrounded by a private park overlooking the Cervo stream.
Bursch means "house" in the ancient Walser dialect of the Germanic peoples who once inhabited the Valsesia valley.
Once you cross the threshold, you will be immersed in an atmosphere with a strong personality, entering rooms filled with collections of vintage objects and furniture.
La Bursch Restaurant does not have a traditional dining room: you will dine at one of the many tables and small tables, many of which are set with white tablecloths that you will find in the house, in a sort of "diffused restaurant" that we had never encountered before. During the summer, the equipment is moved to the garden and under the porch.
The delightful Erika Gotta is a chef who is as young and shy in appearance as she is determined and motivated in the kitchen.
Her dishes, which are constantly evolving, exude personality and character that is constantly on the rise, and are a concentration of technique and ideas!
The cuisine is local, as befits a mountain house like this, but enriched with beautiful creativity that brings modernity to all the dishes, making them totally new and surprising, with a mix of ingredients and aromas that are unforgettable and entice you to return.
The wine pairing by the glass prepared by Daniele Massa to accompany Erika's dishes will allow you to drink very well.
