Siamo a Carrù non potevamo farci mancare sua maestà il Bollito misto con le sue salsine. Il Bollito misto alla piemontese, piatto simbolo del locale, cucinato tutto l’anno e servito in sala al carrello accompagnato dalle sette salse: bagnetto verde, cognà, salsa piccante, salsa all’aglio, salsa di rafano, salsa del Borgo, salsa rubra casalinga. La carne utilizzata è esclusivamente di razza piemontese di allevamenti limitrofi al paese; per buona parte dell’anno si utilizza il blasonato Bue di Carrù. In accompagnamento, purea di patate e carote lessate. Locanda in Cannubi - Barolo (CN)

The Locanda in Cannubi is located on the road from Alba to Barolo, the heart of the Langhe, right in the center of the vineyard that gives it its name, among the most prestigious in Italy and the world.
Owned by the Tenuta Carretta farm and run by the Bertolini-Boggione family, a true institution of traditional Langhe cuisine, it is the result of the careful renovation of an 18th century farmhouse returned to its former glory to offer a refined gastronomic offering and classy hospitality. The fantastic panoramic room is one of the venue's assets: sitting in front of the huge windows you will feel part of the landscape.
The philosophy of Chef Fabio Pungitore is aimed at gradually introducing a nice range of contemporary dishes alongside the traditional ones that have always been on the menu, with great attention to seasonality, a constant search for raw materials of absolute quality and a skilful reinterpretation of the oldest recipes, which are not distorted but rather updated with original and artistic touches.
We immortalized in the kitchen a still active icon of the restaurant, the owner Palmira, intent on preparing her legendary plin.
The Locanda in Cannubi is a place of incomparable beauty in which to savor cuisine of great depth, based not only on tradition and the territory but also on contemporary preparations enhanced by a raw material of absolute excellence, in a unique location with a privileged and spectacular view of the most important Crus of Barolo.
Alongside the inevitable traditional specialities, re-proposed in a contemporary key with extreme grace and respect, the kitchen offers a nice range of more "creative" preparations, all made with wisdom, technique and mastery: thanks to a Chef, Fabio Pungitore, who has made a continuously growing journey here at the Locanda.
