The name "Arburent" for the new "Osteria di Confine" by Federico Costa is a choice that encompasses the philosophy of the restaurant: an Osteria that celebrates the beauty of borders, understood not as separation, but as a union of traditions and flavors, and the multiple family roots of the Chef, who has grandparents from Val Borbera, Tortona, Lombardy and Veneto. The interiors of the venue are the result of a careful, radical renovation of the pre-existing hairdressing salon. The result is warm, welcoming and full of character, with bold but restful colours. Arburent is a pleasant modern tavern with a new generation concept. The cuisine of its Chef and owner Federico Costa is based on selected ingredients, seasonality and attention to detail. Ristorante Monviso - Saluzzo (CN)

Monviso Restaurant, head | heart | belly, is based in Saluzzo in a location defiladed from the historic center, very convenient for parking. It is a young establishment with a friendly, family atmosphere, whose name is a tribute to the famous peak clearly visible on clear days.
The entrance is occupied by the bar area, which is overlooked by the small kitchen. The dining room stands out for its walls and ceilings, which, after the removal of layers of plaster, revealed the frescoes beneath.
Monviso is an establishment led by a young brigade that passionately offers well-curated, well-presented cuisine with a nice personality. Daniele Palazzo is very skilled in working with fish, has a nice intuition for pairings and knows how to fully extract the taste and properties of foods.
