Timo Bistrot - Albenga (SV)

Timo Bistrot is the restaurant of Casa del Monte, a magnificent new resort created from an ancient fortress on the slopes of the hill overlooking Albenga.
The architects of the important four-year recovery project, which returns to the Riviera a piece of history that seemed lost, are the entrepreneur Nicola Trimboli and the architect Luigi Muratorio.
"The Thyme Garden" is a vast terrace reserved for aperitifs at sunset. Among centuries-old olive trees and Mediterranean plants, the gaze is lost on the sea with the Island of Gallinara in the foreground.
The exteriors represent the true heart of the venue: an open-air lounge, the place of choice for summer evenings immersed in a relaxed atmosphere.
You can access it directly by lift from the Reception floor, first encountering the room with the bar counter, and, in front of this, the air-conditioned cellar, which in turn can host small convivial meetings.
The visit to Timo Bistrot left us with the sensation of a circle that closes perfectly: a place where the aesthetics of the location and the content of the dishes travel at the same very high speed, a circular, welcoming and cultured experience, which invites us to return.
Andrea Masala's cuisine stands out and conquers for the quality of the execution, the clarity of the flavors and the great cleanliness of every single preparation.
There is a special grace in the way in which the Chef combines the flavor of the sea with the sweetness of the Albenga garden, supported by an impeccable technique that respects the consistency and identity of each ingredient.
